complements - Is "chicken" a modifier in "chicken soup"?

Wikipedia says "chicken" is an adjunct which modifies the head noun "soup."

But I think this analysis is a little bit weird. How could it be modifying "soup"? "Chicken" doesn't seem to be describing the property of the soup?

Also, to me, using a proform 'one' results in an ungrammatical utterance. So it must be a complement.

A: Do you want some soup?

B: *I need a chicken one.

Can anyone please shed some light?
